Go-To Meal List

You’ve got your meals planned out for the week. You have all the ingredients, and you know how much time it’s going to take to make each meal.

And then you get a text from your son, who says he has to stay after school. He forgot about a meeting or a practice, and it’s mandatory. And he’s not old enough to drive yet.

Now you won’t have time to make the dinner you wanted because you will have to leave to pick him up right in the middle of your meal prep.

Here’s what you can do without resorting to stopping at a fast-food place on the way home.

Have a list of quick and easy go-to meals.

I always have soup, bread, and cheese on hand so I can make grilled cheese sandwiches and soup. I also always have eggs to make scrambled eggs and toast — yay for breakfast for dinner! And, because I’m Italian, I always have pasta and a jar of sauce on hand (which I doctor up considerably in these cases — usually I make my own).

It doesn’t matter what it is, as long as:

1.) your family will eat it

2.) it doesn’t take long to make, and

3.) you have the ingredients for it

Which brings me to the most important part. Make sure you always have the ingredients for one of your go-to meals on hand. As soon as you use them to make one of these “emergency” meals, put them right back on your grocery list for your next shopping trip.
